Update config to match upgrade to Ubuntu 24.04LTS, switch to Tiling WM, and ditch GNOME

Here are a few updates to my config that i aim for:

- Sway/i3 (if i can get i3 to work) for window management
- Ansible for configuration management
- Move from Neovim dev to Stable for stability
- setup native vim config for quick edits
- Automate more of my workflows into shortcuts and scripts in my shell
