Remove Jujutsu overlay backend - #9

Conversation
The shared-store Jujutsu upper backend added substantial complexity (jj-lib dependency, feature gate, mount locking, and separate snapshot flows) for behavior that the directory upper already covers. Overlay uppers are now always a plain directory pair, and `OverlayUpper` is a struct instead of a tagged enum. Also harden replay input reads to reject symlinks and FIFOs by checking the opened inode, and bump the checkpoint schema to 2 to record first-touch conflict baselines.
