Moves CI and release builds to GitHub's xcode-27 image and runs the app's unit tests in CI.

  • xcode-27 runner (same Xcode 27.0 as local); drops the fallback-icon workaround, so release DMGs ship the real icon
  • Installs tmux and the Metal toolchain, which the image lacks
  • Runs make test (738 tests, ~4 min) with a 2-minute per-test timeout, and uploads .xcresult bundles + crash reports
  • Fixes stale OpenCode hook tests (they checked the old project plugin dir and wrote to the real ~/.config/opencode/plugins)
  • Fixes RealPipelineReproTests hanging forever when tmux can't launch (read-to-EOF on a pipe nothing closes)

UI tests stay local for now: the runner window ends up 692 pt tall even at 1920x1080, and 11 of 30 fail on content that doesn't fit.

Bounded waits parked a GCD worker in waitUntilExit(), which can return
seconds after the process exits. The server probe's 2s bound then tripped
on a healthy server (tmux ls exits in <20 ms), reported it wedged, and
new sessions launched without tmux.
