The current star history chart is broken due to GitHub stargazer API restrictions. Switch the chart image and link to the star-history.dera.page mirror in all README files so the chart renders again.

The star history chart in the README is currently broken because the GitHub stargazer API is no longer accessible without a token. This changes the chart to use a working mirror, star-history.dera.page, which requires no API token, so the chart renders correctly again. This applies to the main README as well as the Spanish and Chinese translations.
