Now that 0.62.0 is released, the development version on main is 0.63.0.devN. This PR bumps the hard-coded versioningit fallback version ([tool.versioningit] default-version, introduced in #7426) from 0.54.0dev+Unknown to 0.63.0dev+Unknown. Builds made without git metadata now report the current development series. This is step 7 of the release instructions.

Validation:

• uv run python -c "import versioningit; print(versioningit.get_version(...))" on a copy of pyproject.toml without git metadata: returned 0.63.0dev+Unknown, which normalizes to 0.63.0.dev0+unknown. In the repository, where the version is computed from the v0.62.0 tag, it returned 0.63.0.dev0+..., so the fallback matches the current development series.
• pre-commit run --all-files: passed.
