targets: use an 8 KB default stack on nrf52840 - #5816

The nrf52840 boards inherited the 2 KB goroutine stack from cortex-m. That is easy to overflow, for example writing machine.Flash through a FAT layer, and the overflow corrupts memory with no clear error. The RP2040 and RP2350 board targets already use 8 KB.

The nrf52840 boards inherit the 2 KB default goroutine stack from
cortex-m.json. The RP2040 and RP2350 board targets all set 8 KB.2 KB is easy to overflow. On a XIAO BLE, writing a 512 byte sector to
machine.Flashthrough a small FAT block device layer overflows the main goroutine stack. Depending on what gets overwritten the board hangs, loses USB, reboots in a loop or ends up in the UF2 bootloader, with no error printed. The same program works on RP2 boards with their 8 KB stack.This sets
default-stack-sizeto 8192 innrf52840.json, so all nrf52840 boards get it. The nrf52840 has 256 KB of RAM.Tested on a XIAO BLE:
machine.Flash(with machine/nrf52840: add USB mass storage support #5794 and machine/usb/msc: read the block device outside the USB interrupt #5808) mounts, files copied to it read back the same after a remount and a reboot.
