Adds Pinax to the RPC Providers and Indexers tables.
Pinax provides Firehose, Substreams and archive JSON-RPC for MegaETH mainnet, and maintains the open source Firehose and Substreams projects alongside StreamingFast.

Checked against the live service before submitting:

A note on formatting
I edited via the GitHub API rather than a local checkout, so I could not run
mise run fmtandmise run lint. Column padding was matched by hand against the surrounding rows. If the formatter adjusts the table, I'm happy to push the result, or you're welcome to amend directly.Disclosure: I work at Pinax.
